protein pancake scramble

As I write this post, I’m munching on my protein pancake scramble.  I can’t seem to get those darn things to flip!  Oh well, they still taste delicious!

I also have an extra pretty view this morning thanks to Mario.  I came home last night to a ProFlowers box sitting at my door.  They were definitely a welcome pick me up.  Thanks Babe!

I want to share a recipe with you that was actually a little haphazard in it’s initial creation but turned out to be a WIN.

I had purchased a frozen mix of black beans, corn, peppers, and onion awhile back thinking of using it in a crockpot meal.  But, I was starved Monday when I came home from work and needed a quick meal.  That bag was staring me in the face.

So I threw some of it into a skillet with olive oil to heat it.  Used is as a topping with avocado, tomato, and salsa.  Crumbled some “Food Should Taste Good” tortilla chips on the top.  I scarfed this puppy down in NO TIME!

I makes a great packed lunch as well.  The mixed, once heated through, tasted good cold as well.
