Nope, I couldn’t think of a better name for these. But don’t judge a recipe by the title, these are delicious.
For me, the dip alone could not make a meal. A snack maybe, not a meal. I need substance people!
Why not stuff it into a chicken breast with a little cheese and bake it?
And so it was born
Spinach Chicken Roll Ups
- Make 1 batch of Everyday Glow’s Spinach and Artichoke Dip
- 4 chicken breasts
- Shredded italian cheese blend
Pound out your chicken to 1/2 inch thickness. Spread 1 TBSP of dip onto the chicken with 2 tsp shredded cheese. Roll the chicken and pin sides together with toothpicks. Continue with the remaining chicken.
Bake at 375 for 35 – 40 minutes.

I love this dish just due to its versatility. It can be served warm, chilled, or at room temp. You can thrown any of your favorite vegetables into it or just what you have on hand.
Summer Wild Rice Salad
- 3.5 cups of any wild rice blend
- 1/3 cup of summer maple vinaigrette
- 4 artichoke hearts, chopped
- 10 cherry tomatoes, chopped
- 1/2 yellow pepper, chopped
- 1/2 green pepper, chopped
Cook rice blend according to package. Let cool for a few minutes before assembling. Toss rice, dressing, and veggies together. Serve immediately for a warm salad or let stand in the refrigerator for an hour or overnight.
