What is it about January and needing to organize/clean everything? Shouldn’t that happen in the spring (spring cleaning)? Not for me, or my Mom. Even though we are 444 miles away, we still did the same thing today…organized!

Anyways, I was going to go to the gym today when another horrible stomach ache struck. What is wrong with me!?
So I stayed home, and made homemade granola instead. Logical, I know 🙂
Cinnamon Trail Mix Granola.
- 3 cups rolled oats
- 1 cup Original Fiber One cereal
- 1 cup unsweetened coconut
- 1/2 cup raisins
- 1/2 cup Craisins
- 1/4 cup chopped cashews
- 1/4 cup sliced almonds
- 3 TBSP flaxseeds
- 1.5 tsp cinnamon
- 1/4 cup honey
- 1/4 cup maple syrup
- 1/3 cup canola oil
- 1.5 tsp vanilla
- Preheat your oven to 350. In a big mixing bowl add the first 9 ingredients and mix. In a separate bowl, mix together the honey, maple syrup, canola oil, and vanilla. Add the wet ingredients to the oat mixture in 3 stages. Mix well. Spread onto a large baking sheet. Bake for 30 – 35 minutes, mixing every 10-15 minutes. Lay out onto paper towels once baked to cool. Store in an air tight container.
Why did I call it Trail Mix granola? I think the Fiber One cereal looks like twigs, the flaxseeds look like bird seed, and I always imagine good trail mix to have good nuts and dried fruit in it.
