I woke up feeling the need to sing this song…
If you haven’t guessed, I’m a bit of a morning person. It’s a thing I got from my Dad, definitely not my Mom (sorry Mom…)
One thing that helped me leap out of bed this morning was the thought of this waiting for me in the fridge.
A big bowl of overnight oats. And not just any overnight oats, the overnight oats only a peanut butter (or any kind of nut butter) lover could love.
Peanut Butter Lovers Overnight Oats
- 1/2 cup old fashioned oats
- 3/4 cup vanilla almond milk (if you use regular milk, add a splash of sweetener and vanilla extract)
- 1 TBSP chia seeds
- 1 TBSP powdered peanut butter (I used Just Great Stuff, but PB2 makes a good one too … if you’re going almond butter, use almond meal)
- 1 TBSP creamy peanut butter (or almond butter)
- 1 TBSP raisins
Stir all ingredients together, except the last two, and set in the fridge overnight (or for 1 – 2 hours)
In the morning, top with peanut butter and raisins! You’re ready to go 🙂
This really made getting out of bed so much easier today! Also, my microwave is broken, so a no heat recipe is ideal right now. I never realized how much I depend on my microwave!
