As part of my January goals, I am trying to do more food prep and eat more homemade meals. Living in the city makes getting food on the go pretty easy, however, even when you are trying to make the best choices, extra sodium, hidden fats and sugars sneak in.
To make cooking at home even easier because I am always on the go (hence the blog name Eat on the Run), I look for quick cooking proteins and things that I can make multiple of so I just have to heat up dinner when I walk in the door.
Trader Joes has made my life a lot easier with their Salmon Burgers.
I either put them on my indoor grill or in a pan and sear them about 4 minutes on each side. They are all salmon with a few veggies and seasonings added.
I also use other Trader Joes products to season and cook them.
21 Seasoning Salute might just beat out Mrs. Dash for me. I use it on EVERYTHING! Plus the coconut oil spray makes using coconut oil for light pan searing easier than scraping it out of the jar. And a little lemon juice makes any piece of fish better! Don’t ya think?
What is your go to for quick week night meals?
