Yep. It’s the post Thanksgiving hangover. I’m not talking an alcohol induced hangover… I’m talking about a too much food too much time on my butt hangover.
The cure? Eating clean and sweating. Oh and lots of water.
I got in a great 3 mile run and after 2 days of getting my eating back on track, I have to say it was one of the best runs I’ve had in awhile.
So what’s been on the menu to kick start my body back into healthy living?
Lots of protein and veggies. An egg white scramble with tomato, spinach, and feta is one of my favorite breakfasts! Plus a Wegman’s salad bar beast (named as such due to the size) is always a great edition to any healthy eating regimen.
Also, I’ve been looking on some of the blogs for new recipes and I’ve fallen in love with some of “For the Love of Kale” recipes. So last night I created my own version of her Mediterranean Kale Salad. You know I never follow the recipe…
Roasted Red Pepper Kale Salad
6 large leaves of kale, stems removed and torn
1/2 roasted red pepper, diced
1/2 cup quinoa, cooked
1 TBSP tahini
1 tsp olive oil
1 tsp seasoning of choice (I used 21 seasoning salute from TJ’s)
1 TBSP feta cheese
1 tsp pumpkin seeds
1 TBSP balsamic dressing
Sauté the kale and red pepper in olive oil. Sprinkle with seasoning and pour tahini over right before the kale is wilted. Serve over cooked quinoa. Top with feta, pumpkin seeds, and dressing.
For as earthy as this dish is, it was hearty and absolutely delicious. Oh and it made the perfect “Meatless Monday” dinner
