This morning I made a favorite of mine when I want to indulge but yet am still trying to keep things healthy.
My go to protein pancake recipe was whipped us this morning. I had some strawberries in the fridge, which I sliced on top and then I used:
Which is powdered peanut butter. I found it at Wegmans and thought it would be a great way to add peanut butter flavor to things without the added calories (like smoothies).
I used a little more water to make it into a cream sauce for on top of my pancake. Not bad for a 45 calorie edition. Definitely recommend to anyone who wants peanut flavor without all the calories. Not that great straight up. Save your calories for the real stuff.
Anyways, when I was making my pancake, I thought that it would be great if there was a way I could whip up a bunch of these and take them with me or have them ready for busy mornings.
Then came to mind – Protein Muffins! There are some recipes out on the web. I did a little research and whipped up a combination of a few of them depending on the ingredients I had on hand and what I was hungry for.
And so, these were born.
Peanut Butter Banana Protein Muffins!
2 bananas, mashed
1/2 cup all natural applesauce
2 eggs whites
1 TBSP peanut butter
3 scoops vanilla protein powder
1/2 cup old fashioned oats
1 TBSP brown sugar
1 tsp stevia
1.5 tsp baking powder
0.5 tsp baking soda
2 tsp cinnamon
Mix all ingredients together in a large mixing bowl. Set oven at 350 degrees. Lightly spray pan with non-stick baking spray. Should make 12 regular size muffins.
Bake for 15 – 20 minutes, or until they turn golden brown.
For 73 calories and 6g of protein you have yourself a great snack or edition to your breakfast with a piece of fruit and some coffee.
