Happy Fat Tuesday everyone! I’m not really giving anything up for Lent, so today wasn’t a day of shoving my face full of chocolate or junk food (thank goodness!) But today is International Pancake Day. Did you know that? Would you have changed your breakfast choice … or even your dinner choice, had you known that?
Well good for me, I was told by Healthy Diva early today that it was Pancake Day! So I made the healthiest version of a pancake I know: Protein Pancakes.
The Tone It Up girls probably have the tastiest recipe for a protein pancake, but in my usual format, I don’t follow every recipe to a T. So here’s my take on it:
- 1 scoop vanilla protein powder
- 2 TBSP ground flaxseed
- 1 tsp cinnamon
- 1/2 mashed banana
- 1 tsp stevia
- 1/4 cup egg beaters
- handful of favorite fruit (I used fresh blueberries)
Mix all together and cook like a pancake. I found that it takes a little longer per side than a normal pancake, so keep that in mind. Flipping too early will make them fall apart.
Of course, I used peanut butter instead of syrup. Peanut butter is life. ‘Nuf said.
On a more serious note, I sprained my ankle. Blah.
I rolled it teaching an interval style class and I think I freaked my patrons out because I almost fell (yes it rolled that far). Don’t worry though, I kept them moving 🙂 They kicked butt during their workout!
For almost four days I didn’t exercise – no working out makes Melissa a cranky girl, or at least spacey and lethargic. But I know, it was probably the best thing for my ankle. Between ice, resting, and keeping it wrapped I think I’m on the mend.
Did you know that drawing the alphabet with your injured foot can help in the rehab process? I think that’s neat and I believe it because your ankle gets very stiff from the injury. A … B … C … D…
I thought after 4 days of no workouts that a run would be a good idea…yes I am very smart. Super genius actually. Feel free to call me that at any point 😉
But after a run/walk at an 11 minute per mile pace (slow for me) I felt the ache and tension in my ankle. Not sure it was the best idea, but I just need to run. I swear I get “run-vy” (like envy) when I see people running and I can’t.
This little guy keeps me pretty content even when I’m incapable of exercising.
He says “Mom, just hang out with me…it’s all good”. How can you say no to that face?
Yes, I believe curling up into a ball and hiding my face from the world is a great idea too. Genius. Like mother like son…
