I have to admit, I’ve been off and on with my vegetarian resolution. I’ll go for a few days, and then wham! I’m with friends or family and meat is the focus of the meal.
So I decided to step back and reevaluate why I chose this resolution.
1. I’ve read a lot of the studies looking at the health benefits of a vegetarian diet. Of course there are concerns for inadequacies in certain nutrients, however eating a SMART vegetarian/vegan diet is really what it is about.
2. I love animals. I’ll be the first to admit that if I had to kill my own food, I’d be a vegetarian- no turning back. I just look at Charlie and my heart melts. Plus, as I’m working in the science world right now, it breaks my heart to hear about animal studies. I understand why we have to do it, I appreciate that there are people willing to do it, but I could never handle an animal study with any sort of poise.
3. I like the way I feel when I’ve eaten a well rounded vegetarian diet for a few days. Yes! That’s all it takes for me to feel the effects of the diet.
On Thursday, I definitely had my diet and lifestyle goals in mind when choosing my foods. For lunch (sorry for the poor quality!) I had a great Brie and Apple sandwich with Raspberry sauce on multigrain flatbread with Moroccan Lentil Soup. It was a gloomy day and this brightened my mood!
Tiff came over that evening for a “girl date”! We decided to try the MorningStar Mealstarter Crumbles
We made the most delicious tacos. I threw about half the bag into the skillet with a splash of water, taco seasoning, and medium chunky salsa. We topped them with some tomatoes, red bell pepper, greek yogurt (as sour cream), and lettuce!
Bella was the one who thought they tasted the best!
Bella is a Puggle and is not the most photogenic when she’s begging for tacos and sweet potato fries. But I just love her! Charlie is a little overwhelmed by her loving disposition and decided to take residence under the bed for the duration of her visit haha!
After dinner, Tiff insisted we go to Red Mango! Soft serve ice cream??? Who am I to turn that down?
Excuse my scruffy look, it was a long week!
But I have to say, I WAS SUPER EXCITED FOR MY DELICIOUS CREATION.
Banana and Dark chocolate soft serve with Reeses Pieces, Butterfinger, M&Ms and Chocolate sprinkles. Tiff was the healthy one with a whole bunch of raspberries and a little cheesecake (yes you can get cheesecake at this place!)
All together now!
You know the saying: “Beer is proof God loves us”? Well that’s the man version. The woman version: “Chocolate is proof God loves us” !
That’s two experiences (Red Mango and Vegetarianism) that I’ve talked about, but I have one more.
