You may have noticed that in the post about the giveaway that I showed you a pizza that I packed for my lunch. The idea for this pizza came when I was pinning new recipes (yes, Pinterest obsessed right now) and thought that the sauce on a pizza was actually refried beans.
So I got to thinking, why not try making a healthy pizza with Mexican flair?
1 eight to ten inch whole wheat/whole grain tortilla
1/4 cup vegetarian refried beans
1/3 cup low fat cheddar cheese
half an avocado chopped
non-stick cooking spray
- Lightly spray the tortilla and place on a baking sheet. Bake at 350 for 5 – 8 minutes until the edges start to curl and some of moisture is out of the tortilla (this is an important step because just putting the other ingredients on top will create a moist tortilla and make it less like a pizza)
- Spread warm tortilla with refried beans. Sprinkle cheese on top.
- Bake for 10 – 15 minutes at 350 or until the cheese is fully melted and the refried beans are warm.
- Top with your avocado, salsa, lettuce, and extra cheese.
This pizza is very filling. I made one of these and couldn’t even finish it! Between the whole grain in the tortilla and the fiber in the beans, it filled me up quick!
