How is everyone? It’s a beautiful week here and I’m definitely enjoying the warm weather and sunshine, plus the walk breaks I can now take while I’m at the lab (definitely helps productivity).
This weekend I took advantage of the weather and got the grill out.
I own the Weber Q100 Gas Grill. I bought the stand separately because it is a portable grill, which is perfect if you want to tailgate or if you have a small space that you need to store it in (which is my issue). Plus, usually I’m cooking for one.
I made one of my favorite summer grilling entrees: Spicy Grilled Shrimp. Are you ready for a 3 ingredient recipe??? Hold onto your pants ladies and gents:
For every serving of shrimp, create a marinade of 1 TBSP Canola or Olive Oil and 1 tsp of chili powder. Marinate shrimp for 30 minutes and grill until the shrimps curl. Enjoy with your favorite side dishes.
I also made my Bell Pepper, Tomato and Chickpea Salad. Such a light and summery meal!
I also skewered a red bell pepper and babybellas. Mushrooms are something I have to be in the mood for, but this was a great way to make them. Just spritzed the skewer with olive oil and a little S&P.
Of course a Sunday evening summer meal wouldn’t be complete without a visit from a well known man named Sam:
After I ran the marathon, one of the immediate questions I got was “What’s your next goal?” At first, I was like “Geeeeezzz! Just let me relax a moment”. But then after a few days I realized how easy it could be to get lazy. So this weekend I took sometime to scope out my next few races.
