
I loved Dr. Seuss when I was little. Green Eggs and Ham was probably my favorite. I always wondered “what do green eggs and ham really taste like?”
Well, now that I’m older and wiser, I like the think that they taste and look like this.
Not sure if frittata was what Dr. Seuss had in mind for Sam I Am.
This is my last day participating in #surviveon35 and I’ve always known that eggs are an awesome source of nutrition for a relatively cheap price.
My inspiration came from Good and Fresh magazine which is actually just a special publication from Better Homes and Gardens. There are some great ideas in this magazine for all the fresh produce that is available around this time of year.
So how do you make Green Eggs and Ham? Well you will need:
- 6 eggs
- 8 – 10 asparagus spears, woody part cut off
- 3/4 cup of Italian cheeses
- 1 cup diced ham
- Pepper to taste
Lightly spray an 8×8 baking dish and heat over to 375. Beat eggs then add asparagus spears, cut into 1 inch pieces, ham, and cheese. Mix together. Add pepper. Pour into baking dish. Bake for 35 – 40 minutes or until the egg is completely cooked.
Total cost? The recipe is for 2 servings and it came out to $1.44/serving. I have to admit that I didn’t include the cost of ham since the ham was leftovers from Easter dinner and was just sitting in the freezer. If purchasing ham, I’m assuming the cost would rise closer to $2/serving.
