Fourth of July Eats

I didn’t forget about you yesterday.  I just decided to enjoy the Fourth of July since I had the day off.  Oh and I also picked the winner of the swag bag giveaway!

Any who, my Fourth started with a little French toast, or since it was the fourth of July, Freedom Toast Winking smile

My mom’s French toast is always the best.  She makes it and then freezes it for me.  I just pop it in the toaster when I’m ready to eat it.  Delish!

I spent the better part of my morning scrubbing my apartment.  OCD much?  Yeah, I can’t really relax until everything is clean.

Once that was done, it was time to spend the afternoon poolside.

I had taken some of my berries that were about to go bad and froze them in ice cubes.  It was the perfect way to flavor my water to take to the pool.  Nothing artificial over here!

The pool was hoppin’ but I still found a way to nap.  I guess cleaning will wear you out a bit…who knew?

I didn’t get to stay for very long before my tummy started to rumble.

It was about 90 degrees yesterday and the only thing I could even fathom eating for lunch was a green smoothie.  Oh and if you’re looking to join a fun challenge for July, hop on over the The Colourful Palate for her Colorful Smoothie Challenge!)

Ingredients: big handful of spinach, 1/3 cup diced cucumber (with skin), 2 TBSP crushed pineapple, frozen strawberries, coconut milk, and ice.  Very refreshing!

Charlie and I enjoyed an afternoon cat nap together (pun totally intended)

So far fourth of July eats were treating me well and I wasn’t going to let it go for dinner.

You may call me the grill master.  Marinated zucchini, lean chicken sausages, and southwestern corn in the foil.

I won’t lie, summertime food is the most fun to make and clean up is so easy. 

And in true American fashion, I went to watch the fireworks.  State College is actually ranked in the top 5 nationally for fireworks displays.  Just down the street from where I live is a hill that overlooks Beaver Stadium, so I was lucky enough to avoid traffic and still enjoy the show.

For the fourth of July landing in the middle of the week, it wasn’t that bad of holiday.  Fourth of July eats and fireworks will make this girl happy any day.

My 4th was a lot like yours- very relaxing! I just hung around the pool and ate some good BBQ. Perfect day :-) .
