I’m not sure what it was, but I’ve been craving summery types of foods and drinks.
It definitely wasn’t the weather! It snowed/rained/hailed today and it felt more like November than April.
I’ll survive because they are calling for 70 degree weather this weekend! Yay!
But, I believe the reason for my summery mood may be my new candle…
Bath and Body has such great scents for summer and Tiki Beach did it for me. Smells like sand, coconut, and vanilla. Just give me a pina coloda, I’ll be fine
Taking inspiration from my candle and my inner love of warm weather, I whipped up a gallon of fresh tea.
But not just any tea! Blueberry Citrus Iced Tea, doesn’t that sound yummy?
I used 8 packets of True Blueberry herbal tea by Celestial Seasonings (one of my favorite tea brands), and steeped them in 2 cups of hot water for 15 minutes.
I then sliced half an orange and half a lemon and used them to flavor the tea. I took a big cup with me to work today, and it was nice change from just sipping water all day. Whip some up tonight, then you’ll be ready for Thirsty Thursday!
This week I’ve also been taking chicken salad wraps to work for lunch. However, I’ve given them a little twist by wrapping them in large red lettuce leaves instead of tortilla wraps (saves a few calories and carbs and also gives it fresh and crisp flavor).
I packed 3 small lettuce leaves filled with fresh made chicken salad that I made with the leftover roasted chicken from Easter.
Eat on the Run’s Fresh Chicken Salad
Ingredients:
- 1.5 cups shredded chicken (using a rotisserie chicken adds a little more flavor)
- 1/4 cup of plain greek yogurt
- 1 TBSP spicy brown mustard
- 1 large celery stalk, chopped
- 10 grapes, cut in half
- 1 tsp Italian seasonings
- S&P to taste
Mix all ingredients together. Let salad sit in fridge for a few hours or overnight to allow flavors to blend.
This should make four servings. Each serving has 95 calories, 14g of protein, 2g of fat, and 5g of carbs.
