It is that time of year where we find ourselves (hopefully) with a surplus of fresh fruits and veggies from the garden or from our farmers market trips. But there is only so much grilled zucchini you can eat. So what do you do when you have zucchini’s sitting around your house the size of your arm…
You make these.
Cinnamon Sugar Zucchini Muffins. Other than peanut butter and jelly and salt and pepper, my other favorite flavor combination is cinnamon sugar.
Oh, did I mention these are healthy as well? …relatively
They do have sugar in the name.
Cinnamon Sugar Zucchini Muffins

Ingredients:

1- 1/2 cups whole wheat pastry flour

1/2 cup white sugar

1/2 cup packed brown sugar

1-1/2 cups grated zucchini (I put 2 cups diced zucchini in a food processor)

3 egg whites
-
1/2 tsp. cinnamon
-
1/4 tsp. nutmeg
-
1 tsp. vanilla extract
-
1/3 cup all natural applesauce
-
2 tsp. baking powder
-
1/2 cup cinnamon chips
-
1/2 cup chopped walnuts
-
Cinnamon and sugar for topping
Mix flour, sugars, spices, and baking powder together. In a separate bowl, mix egg whites, applesauce, zucchini, and vanilla together. Add wet to dry ingredients. Fold together. Add nuts and chips.
Fill muffin pan to 3/4 the way full. Makes 12 muffins. Top with cinnamon sugar. Bake at 375 for 25 minutes or until golden brown.
Great topped with peanut butter (duh)!

I had a couple of zucchini arm-sized last summer. I will be giving this recipe a try! Always on the lookout for yummy ways to make zucchini muffins and breads.
