I love my crock pot. It’s probably my favorite piece of kitchen equipment when I’m busy. Actually, nix that, it’s probably my favorite kitchen appliance period. It does the heavy lifting, I just have to provide the ingredients. A great working relationship if I do say so myself.
So when I had errands to run today, little food in my apartment, and grocery shopping to do, the crock pot saved me. This is 3 ingredients…ok 4 if you want to count the bun. Either way, it’s simple. That’s the way I like my food…delicious, healthy, and SIMPLE.
Well, how about a recipe? You got it dude.
Chicken Caesar Crock Pot Sandwich
- 2 large chicken breasts
- 1/2 cup lite Caesar dressing
- 4 ciabatta rolls
- Parm for sprinkling
Place chicken in the crockpot along with 1/2 cup of water. S&P to flavor slightly. Cook on high 3 – 4 hours or until chicken is fully cooked and easy to shred.
Shred the chicken in the crockpot. Add Caesar dressing. Toss. Sprinkle with parm if desired. Cook for 30 minutes more or until heated through.
Place 1/4 the mixture on a toasted ciabatta roll. Depending on your tastes you can top with tomato, romaine lettuce, or a little more parm. I liked romaine just for the crunch.
